My lunches need spicing up. That’s why I devoured this title–Spice Up Your Lunches! –from my new friend and fellow cook but better than I am: Stephanie. I mean, with a blog called: Read Cook Devour. I mean, is there anything else? And you’ll be glad to note (I was glad to note) she has a category called: Reliable Recipes. As my faithful readers know, you aren’t faithful because of my recipes. Not always reliable, nope, but I’m always glad you are reliably reading! Here’s what I made after reading and devouring Stephanie’s list of yummy sandwich fixins’. I’m not sure if she’s from the South or not, but fixin’s just came out, so that’s it. (Stephanie, where are you from?)
My Bethany is not a great mayo lover (“I hate mayo!”–Beth) but I do love a moist sandwich, especially if using sourdough bread. My neighbor, Jeff gifted us with homemade Onion Marmalade. He’s a Mechanical Engineer with a penchant for cooking and making wine and smoked things. He was a Boy Scout. (Of course, so was my Man-in-Plaid and he has a penchant for eating burritos and pizza and not making anything having to do with food. Both Eagle Scouts, actually.)
Our spiced up lunch sandwich:
Sliced deli turkey
Lettuce, avocado, tomato (optional – as in, I forgot)
Grilled in our George Foreman til medium brown.
I received the “Good Job, Mom!” Award from Bethany and that was all that mattered that day. It was the Brie, I’m pretty sure.
Good to be loved by Bethany.
Here are two super-duper recipes from Stephanie that you will love and adore especially if you love curry. I know she’s jealous of me because we have a Trader Joe’s right across the street. I mean, who has that? We do. (Of course, I still drive instead of walk.) I’m secretly jealous of her, but do not tell. Eat brie and curry, instead.
